INGREDIENTS NEEDED:

8 ounces (about 2 cups) of elbow macaroni.

4 Tbsp.Of butter.

1/4 Cup.Of all-purpose flour.

2 1/2 Cups.Of whole milk.

2 Cups.Of shredded sharp cheddar cheese.

1 Cup.Of shredded Gruyere cheese (or substitute with Swiss or Monterey Jack)

1/2 Tsp.Of salt.

1/4 Tsp.Of black pepper.

1/4 Tsp.Of paprika.

PREPARATION:

1st Step 

Cook the elbow macaroni following the instructions on the package until al dente. Drain and reserve.

2nd Step 

Melt the butter in a large saucepan over medium heat. Continuously incorporate the flour into the molten butter for one minute to create a roux. This will make the sauce thicker.

3rd Step 

Pour the milk in gradually while continuously whisking to prevent clots from forming. Continue cooking and whisking for approximately 5 to 7 minutes, or until the sauce thickens and coats the back of a spoon.

4th Step 

Reduce the heat to low and stir in the cheddar and Gruyere, reserving a small amount for garnish if desired. Stir until the cheese has dissolved completely and the sauce has become smooth. As desired, season the sauce with salt and black pepper.
