INGREDIENTS YOU’LL NEED:

1 Cup.Of pecan halves.

1 Cup.Of caramel candies (individually wrapped).

1 Cup.Of semisweet or milk chocolate chips.

1 Tbsp.Of vegetable shortening (optional).

PREPARATION:

1st Step

Prepare a baking sheet by covering it with parchment or a silicone mat. The candy won't cling, and it'll be simpler to peel off after it hardens.

2nd Step

Prepare a baking dish by setting the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius). On a baking sheet, scatter the pecan halves in a single layer. In a preheated oven, toast them for 8 to 10 minutes, or until they have developed a pleasant aroma and a light brown color. Take it out of the oven and let it cool for a while.

3rd Step

Make a little ball out of a spoonful of caramel candy. Make sure the pecan half is securely pressed into the top of the caramel ball. The remaining caramels and halves of pecans should be treated in a similar fashion.

4th Step

Put some water (approximately an inch) into a saucepan and heat it on the stove. Place a heat-resistant bowl over the saucepan, ensuring sure the bowl's base doesn't fall into the liquid below. By doing so, a double boiler is set up, which can be used to melt the chocolate.

5th Step

Put the chocolate chips in a basin that can withstand heat. As the chocolate melts, stir it every so often. If you want to make the chocolate simpler to work with, you may add a tablespoon of vegetable shortening to it. When the chocolate has melted and is smooth, take the bowl from the heat.

6th Step

Gently dip each pecan caramel cluster into the melted chocolate using a fork or dipping utensil. Cover it with chocolate and set it down to let the excess chocolate fall off. Return the coated cluster to the baking sheet you previously used. All of the clusters should be treated in the same way.

7th Step

Let the chocolate cool to room temperature and harden entirely. This may take a while, but putting the baking sheet in the fridge can speed up the process significantly. Homemade Turtle Candies with Pecans and Caramel are ready to eat as soon as the chocolate has set. Keep the candies in an airtight jar for up to two weeks at room temperature.

RECIPE NOTES:

Instead of using individually wrapped caramels, you may use store-bought caramel sauce. Once the caramel sauce has thickened somewhat from being heated, you may continue with the recipe as directed.

If you want to put a new spin on this traditional sweet, try using almonds or walnuts instead.

If you want to make a bigger quantity, just double the amount of each item by two or three, as appropriate.
