TO MAKE AVOCADO TACOS, YOU WILL NEED THE FOLLOWING INGREDIENTS:

FOR THE FILLING:

2 large ripe avocados.

1 Cup.Of black beans, cooked and drained.

A small red onion, finely chopped.

1 tomato, diced.

1 jalapeño pepper, seeded and minced.

1/4 Cup.Of fresh chopped cilantro.

Juice of 1 lime.

Salt and pepper to taste.

FOR THE TACO SHELLS AND GARNISH:

8 small corn tortillas.

1 Cup.Of shredded lettuce.

1/2 Cup.Of diced tomatoes.

1/4 Cup.Of chopped fresh cilantro.

Lime wedges for serving.

PREPARATION:

1st Step

Cut the avocados in half, remove the pits, and scoop out the flesh into a mixing dish. With a fork, mash the avocados until they're the texture you want (smooth or somewhat chunky).

2nd Step 

Throw in some salt, pepper, onion, tomato, and jalapeno, with some cilantro, lime juice, and a squeeze of fresh lime. Combine all of the ingredients by gently stirring them together. Season to your liking.

3rd Step 

Heat a griddle or skillet without nonstick coating over medium heat. Warm the tortillas, one at a time, for about 30 seconds on each side until they become soft and pliable.

4th Step 

Wrap the heated tortillas in a clean dish towel and stack them on a plate.

5th Step 

Put some of the avocados filling down the middle of a heated tortilla. Sprinkle some fresh cilantro, tomato dice, and shredded lettuce on top.

6th Step 

For an added hit of citrus, try squeezing a slice of lime over the filling before serving. And do it all over again with the rest of the tortillas and filling.

7th Step 

Set out a tray and top it with fresh cilantro and lime wedges, then add the avocado tacos. While the tacos are still hot and the flavors are at their peak, serve them to your guests.

TIPS:

To guarantee perfectly ripe avocados, choose those that give just a little when gently pressed.

Leave some of the jalapeno seeds in or add a dash of hot sauce to the avocado filling for a hotter kick, if desired.

Avocado tacos may be made to taste in anyway you want by adding different toppings like salsa, sour cream, or shredded cheese.
