LEMON BLUEBERRY LOAF

 


THE INGREDIENTS LIST:

1 1/2 Cups.Of all-purpose flour.

1 Tsp.Of baking powder.

1/4 Tsp.Of salt.

1/2 Cup.Of unsalted butter, softened.

1 Cup.Of granulated sugar.

2 large eggs.

1 Tsp.Of vanilla extract.

Zest of a large lemon.

1/2 Cup.Of sour cream. 

2 Tbsp.Of fresh lemon juice. 

1 Cup.Of fresh or frozen blueberries (if using frozen, do not thaw). 

Powdered sugar for dusting (optional). 

PREPARATION METHOD:

1st Step 

Prepare the oven to 350 degrees Fahrenheit (175 degrees Celsius). To facilitate the loaf's removal, grease and flour a 9x5-inch loaf pan or line it with parchment paper.

2nd Step 

Whisk together the all-purpose flour, baking powder, and salt in a medium mixing basin. Set aside.

3rd Step 

In a large mixing basin, cream the butter and sugar together until light and frothy. This phase can be completed with either a manual mixer or a stand mixer.

4th Step 

Before adding the next egg, ensure that the previous egg has been thoroughly incorporated. Mix the vanilla extract and lemon rind thoroughly.

5th Step 

Alternately incorporate the dry ingredient mixture and sour cream into the butter mixture. Start and finish with powdered ingredients. Mix just until combined, taking care not to overmix.

6th Step 

Add the fresh lemon juice and blueberries to a bowl and gently combine. Because you want the blueberries to retain their shape, be careful not to pulverize them.

7th Step 

Pour the batter evenly into the prepared loaf pan and bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clear.

8th Step

If the loaf's top begins to brown too rapidly, you can cover it with aluminum foil to prevent over-browning.

9th Step 

Remove the loaf from the oven and allow it to settle in the pan for approximately 10 minutes. The baguette should then be transferred to a wire tray to chill completely.

10th Step 

After the baguette has settled, you can sprinkle the top with powdered sugar for decoration. Slice the Lemon Blueberry Loaf and serve it as a delightful dessert or a sweet addition to your breakfast or brunch.
