THE INGREDIENTS LIST:

2 ½ to 3 Lbs.Of chicken pieces (legs, thighs, breasts, or wings).

2 Cups.Of buttermilk.

2 Cups.Of all-purpose flour.

2 Tsp.Of salt.

1 Tsp.Of black pepper.

1 Tsp.Of paprika.

1 Tsp.Of garlic powder.

1 Tsp.Of onion powder.

½ Tsp.Of cayenne pepper (optional for heat).

Vegetable oil, for frying.

PREPARATION:

Step 1

In a bowl, Mix the chicken pieces with buttermilk. Make sure the chicken is fully coated. Cover it and put in the fridge for at least 1 hour or overnight.

Step 2

In a shallow dish or a large plastic bag, combine the all-purpose flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if desired). Mix the dry ingredients well to ensure even seasoning.

Step 3

Now, remove the chicken from the buttermilk, allowing any excess to drip off. Dip each piece into the flour mixture, making sure to coat it thoroughly. Shake off any excess flour and set the coated chicken on a wire rack. Let it rest for about 15-20 minutes to allow the coating to adhere to the chicken.

Step 4

In a large, heavy-bottomed skillet or Dutch oven, pour enough vegetable oil to reach a depth of about 1’’  and heat the oil over medium-high heat until it reaches a temp of approx. 350°F (175°C). A cooking thermometer can help monitor the temperature accurately.

Step 5

Carefully place the chicken pieces into the hot oil, skin side down. Be cautious not to overcrowd the pan, as this can lower the oil temperature and result in less crispy chicken. Fry the chicken in batches!!

Step 6

Fry the chicken for about 6-8 minutes per side, or until the coating is golden brown and the internal temperature reaches 165°F (74°C) for poultry. Use tongs to turn the chicken pieces halfway through the cooking process, ensuring even browning.

Step 7

Once the chicken is cooked, transfer it to a wire rack or a plate lined with paper towels to drain excess oil. Let it rest for a 5 to 10 minutes before serving.

Step 8

Serve the Southern Fried Chicken hot and crispy, accompanied by classic sides like mashed potatoes, coleslaw, cornbread, or collard greens. It's also fantastic with hot sauce, honey, or a drizzle of barbecue sauce for added flavor.

Note: 

For an extra crispy coating, you can double dip the chicken in the flour mixture after the initial coating has had a chance to set.
