INGREDIENTS NEEDED:

FOR THE PORK CHOPS:

4 bone-in pork chops.

2 tbsp.Of olive oil.

Salt and pepper, to taste.

2 cloves of garlic, minced.

1 tsp.Of dried thyme.

1 tsp.Of dried rosemary.

FOR THE SCALLOPED POTATOES:

4 large potatoes, peeled and thinly sliced.

1 thinly sliced onion.

2 Cups.Of shredded cheddar cheese.

2 Cups.Of whole milk.

2 tbsp.Of all-purpose flour.

2 tbsp.Of butter.

Salt and pepper, to taste.

Fresh parsley, for garnish (optional).

PREPARATION:

1st Step

Turn the oven temperature up to 400F (200C). Rub both sides of the pork chops with a mixture of salt, pepper, chopped garlic, dried thyme, and dried rosemary.

2nd Step

Heat olive oil in a large oven-safe skillet over medium-high heat. The pork chops should be seared for around 3 to 4 minutes on each side.

3rd Step

Put the pan into the hot oven and bake for another 12-15 minutes, or until the pork achieves an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius). Take the pan out of the oven after the pork chops are done cooking and let them rest for a few minutes before serving.

4th Step

Turn the heat down to 375F/190C in the oven. Butter should be melted in a separate pan over low to medium heat.

5th Step

Throw in some onion slices and cook them down until they're transparent. Toss the flour over the onions and toss until it is completely absorbed, which should take about a minute or two.

6th Step

Pour the milk in gradually while swirling continually to avoid clumping. Keep cooking it until it bubbles and thickens.

7th Step

Turn off the heat and toss in half of the shredded cheddar cheese to make a smooth and creamy sauce. Taste the sauce and adjust the seasonings as needed.

8th Step

Half of the sliced potatoes and half of the creamy sauce should be layered in a greased baking dish. The remaining potatoes and sauce should be layered similarly.

9th Step

Cook for 40 minutes with the foil covering the dish. The potatoes should be soft and the cheese should be brown and bubbling after another 15-20 minutes in the oven after the 40 minutes have passed with the foil removed.

10th Step

When the time comes to serve the pork chops and scalloped potatoes, place the chops on a platter and top with a heaping helping of the cheesy potatoes.

11th Step

If you'd like to add some brightness and vibrancy, garnish with fresh parsley. Enjoy these juicy pork chops with a side of smooth scalloped potatoes as soon as possible so that the flavors may fully develop.
