HOW TO MAKE OKLAHOMA NUT CANDY

Only hearing the name of this candy was enough to pique my curiosity, and after doing a little bit of research, I discovered that it had quite an interesting history! This Oklahoma nut candy is one of the best sweets you can ever try!!! You are free to choose whatever kind of nut you like, although traditionally, pecans and walnuts have been the most popular options. When I think about it, I can't help but imagine that peanuts would be pretty tasty as well. In my take on things, I've decided to stick with the tried-and-true method of using pecans. 

Even though the ingredients that are used here are all fairly easy to come by, as is the case with the majority of candy recipes, there are a few specific steps that need to be completed correctly. This recipe can be made significantly simpler by utilizing a candy thermometer and possibly even a second pair of hands for the stirring step. Don't be put off by the preparation; this delicacy is well worth your time. I'm certain that after the first mouthful, you'll agree with me!

INGREDIENTS NEEDED: 

6 Cups.Of granulated white sugar (divided).

2 Cups.Of heavy cream. 

½ Cup.Of unsalted butter. 

¼ Tsp.Of baking soda. 

1 Tsp.Of vanilla extract. 

1½ Cups.Of chopped walnuts or pecan. 

PREPARATION: 

1st Step

First; you need to prepare a baking dish that's 9x13 and put it aside after greasing it. 

2nd Step

Put two cups of sugar in a small saucepan (preferably one with a heavy bottom; if you have one, use it!) and boil it up while stirring it often over low heat. Simmer for about 20 minutes, or until the sugar has fully melted. 

3rd Step

While the sugar is reducing, put the remaining four cups of sugar and the heavy cream in a large saucepan (or a dutch oven; you want a huge pot for this!). Cook the sugar until it is completely dissolved. Keep the sugar in your saucepan warm by keeping it on the stove at a moderate simmer until it has melted. 

4th Step

While stirring constantly, add the sugar that has been melted to a big pot. Now raise the temperature to medium and continue to cook the mixture until it reaches 244 degrees Fahrenheit, often known as the softball stage. 

5th Step 

Take the pan off the heat and mix in the baking soda until it is well incorporated. Add butter and vanilla. Continue stirring until the butter has completely melted and the mixture is completely smooth. Let rest for 20 minutes. 

6th Step

When the mixture has had some time to settle, whisk in the nuts and continue mixing until the shine is gone. Add to a baking dish that has been prepared. 

7th Step

Let it cool for at least one to two hours, or perhaps overnight. To serve, cut the cake into tiny squares.
